Healthy Lunch Ideas for Back to School
Back to School season is here and we want to help you fill your kid’s lunch boxes with the best food. With these recipes you won’t have to worry about what to make for tomorrow’s lunch. Simple and healthy, that is the goal. Enjoy!
1.Breakfast Roll Ups
Enjoy this mess free style of serving your child a complete nutritious breakfast, all wrapped up in a warm and soft AlbaLisa Organic Wheat Flour Tortilla. Children love them! Our tortillas are par-baked and cooked in seconds. They are made this way to bring a homemade tasting experience to your kitchen!
Ingredients (Serves 1):
1 egg
1 tsp water or milk
1 tsp butter, unsalted
Salt and Pepper, to taste
AlbaLisa Organic Wheat Flour Tortillas
Optional fillings:
1 cup Baby Spinach
1 slice of turkey ham
1 slice of cheese
Avocado slices
Directions:
In a small bowl, beat together egg and water/milk until combined. Season with salt and pepper.
Heat a pan that has nearly the same diameter as the tortilla over medium-low heat. Add butter and pour egg mixture into the pan. You want a pretty thin layer, let it cook until it's firm enough to flip. Let it cook for 10 more seconds.
Cook the Organic Wheat Flour Tortillas on a clean skillet at medium heat for about 20 seconds or until it bubbles. Flip it and let it cook until it bubbles again and golden brown spots form.
Place the egg omelet on top of the tortilla.Top egg with fillings. Roll up the tortilla somewhat firmly, but without breaking the tortilla. Cut roll up in half if needed and serve.
2. Crispy Baked Chicken Taquitos
This recipe has an all-time favourite Mexican meal which are taquitos! They are made healthier by baking them instead of frying and using fresh ingredients for the sides. Super easy and quick to make, use AlbaLisa Organic Yellow Corn tortillas for a truly authentic Mexican flavour!
Ingredients:
1 cup of chicken breast, cooked and shredded
½ cup of shredded cheese
⅓ cup of plain Greek Yogurt
½ tbsp taco seasoning or cumin, paprika, salt and pepper, to taste
Salt, to taste

Directions:
Preheat the oven to 375 degrees F or 190 degrees C. Prepare a baking sheet by spraying it with nonstick spray. Set aside.In a medium bowl, combine the chicken, greek yogurt ,taco seasoning and shredded cheese. Mix to combine to incorporate.
Sprinkle with water or brush oil on the tortillas. Then, place them on a hot skillet. Let the tortilla heat up for about 20 seconds and flip only once. Heat it up for another 20 seconds or until the tortilla looks and feels soft. Immediately transfer the tortillas into a tea towel or a piece of aluminum foil. Keep them covered until you are ready to assemble.
Spread out the chicken filling, dividing it evenly through the tortillas you have warmed up. Roll up the taquitos and put a toothpick over the fold so they stay in the taquito shape.
Bake in the oven until crispy, 15-17 minutes. When the taquitos are done air-frying, remove the toothpicks that retained the shape and serve with a hearty side of guacamole or refried beans to dip!
3. Veggie and Ground Beed Taco Salad
We know that sometimes it is hard to get our kids to eat as much veggies as we wished, but with this yummy taco salad that won’t be a worry anymore. It will be easier for your child to eat by assembling the salad beforehand and pairing it with our handcrafted Organic Tortilla Chips. They won’t be able to wait to dig in this healthy fix!
Ingredients (serves 1):
For salad:
1 cup of Iceberg Lettuce, chopped
¼ cup black beans
¼ cup corn
½ avocado, sliced
½ cup cucumber, diced
½ cup cherry tomatoes, cut in half
1 lime
¼ cup Thornloe Mild Cheddar cheese, shredded
AlbaLisa Organic Tortilla Chips*, as desired

For ground beef:
1 cup or 80 g of Grass Fed Lean Ground Beef
½ tsp Chili Seasoning
½ tsp Cumin
½ tsp Garlic Powder
½ tsp Onion Powder
Salt and Pepper, to taste
1 tbsp Sunflower Oil
Directions:
Chop the lettuce and toss in a large bowl. Dice cucumber, tomatoes , avocado. Drain and rinse corn and beans. Add to the bowl. Dress with fresh lime juice and a small pinch of salt, toss to combine.
In a medium pan in medium high heat, brown beef until cooked through. Add the seasoning and stir well to combine. Let it cool before adding the seasoned ground beef to the salad mixture, toss to combine.
Serve with a side of AlbaLisa Organic Tortilla Chips. Enjoy!
