Must-try Recipes for Summer Cottage

Today we prepared these recipes inspired by the wonderful weather the summer brings and the long awaited time for visiting our cabins and cottages. These recipes are intended to help you prepare a full-course meal with a drink, an appetizer and a main dish and enjoy a fun Mexican themed meal!

1.Refreshing Mango & Chamoy Smoothie

Mango Smoothie with Chamoy and Tajin

Mango Smoothie is a typical Mexican drink that you can’t miss out on! It is a really good idea to use this summer’s fresh produce in as many dishes as possible, and this sweet fruit combined with spicy-tangy Chamoy will give you the perfect summer drink! 

 

Ingredients (4 drinks):

4 cups mango juice

20 ice cubes

2 mangos, we suggest buying Ataulfo Mangos

Tajin, as desired 

Chamoy, as desired 

2 tbsp of fresh lime juice, about 1 large lime

Directions: 

First dip the rim of each glass into some chamoy, then dip into some Tajin to coat. 

Inside a clear glass, pour your desired amount of chamoy sauce near the top and swirl it around to coat around the glass and down to the bottom. If you prefer, you can add a little of the extra chopped mango to the bottom of the glass. 

Pour the mango and lime juice, ice cubes, and the mango into a blender. Blend on high speed until smooth and creamy. 
Pour the mixture in and optionally sprinkle with Tajin and add more chamoy on top.

2. Carne Asada Tacos

Carne Asada Tacos

Summertime is equal to lots of barbecuing on the grill, and carne asada is perfect for those flames. This is an easy recipe to make, and you’ll see these tacos are sure to impress your family and guests.

Ingredients: 

1 kg Flank, Skirt or Sirloin Steak 

¼ cup lime juice

¼ cup orange juice (no pulp) 

¼ cup soy sauce 

½ cup olive oil 

4 garlic cloves, finely chopped

1 tbsp ground cumin 

2 tsp chilli powder

1 tsp cumin 

1 tsp salt and pepper

AlbaLisa Organic Tortillas : Wheat Flour or Gluten Free Corn

Directions: 

In a large, shallow bowl, combine the marinade ingredients and whisk until well combined. Place Flank Steak into the marinade and turn several times to coat. Cover tightly with plastic wrap and marinate in the refrigerator for at least 6 hours, and preferably overnight. Turn the steak once while marinating.

Preheat an outdoor grill for medium-high heat, and lightly oil the grate. Remove the steak from the marinade and grill to desired doneness. Discard used marinade. Remove meat from heat and slice across the grain.

For Wheat Flour Tortillas: This time we highly recommend that you cook them on the grill for a nice charred flavour. 

For Corn Tortillas: Brush your tortillas with oil and cook them on the grill, you can let them crisp a bit! Trust us, you will love your tacos done this way!

3. Mango Pico de Gallo

Pico de Gallo is the perfect pair for our selection of AlbaLisa chilli lime Tortilla chips, but you can elevate the flavours with fresh mango. We recommend you find mango Ataulfo (Find at Perola or even at your local supermarket) which is sweeter and will contrast really well with the tomatoes and jalapeños. Also, remove the seeds from the jalapeño if you don't want too much spice.

Ingredients:

1 medium mango, diced

2 medium Roma tomatoes, diced

½ medium jalapeño, diced

Juice from 1 lime

A small bunch of Cilantro, chopped 

¼ red onion, diced

Kosher Salt, to taste

AlbaLisa Organic Chilli Lime Tortilla Chips

Directions: 

Place mango, tomatoes, onions, chilies and cilantro in a medium bowl. Drizzle lime juice and add salt.  

With a large spoon, gently toss the ingredients together, being careful not to bruise the fruit. Taste and adjust the seasoning if needed with more salt or lime juice. 

Let it sit for about 10 minutes for the flavours to incorporate, serve with AlbaLisa Organic Tortilla Chips or eat it with your Tacos de carne asada. Enjoy!
