Low-Cal Tacos for Lunch

2022 is finally here, and like us, we want you to feel motivated to kick off the year better than last. After a season of treats and indulgences we are looking forward to start eating clean again. With these recipes we can help you eat a delicious meal and keep your health goals in mind.

1. Roasted Veggie Bean Tacos

Vegan Low-Calorie Roasted Veggie Tacos

Let’s begin with a truly addictive recipe! These tacos are a fantastic way to incorporate beans and veggies in your meal, and they can easily be kept low calorie. We included a recipe to make your own refried beans but in an elevated-healthy way. Making these tacos is so easy, and they turn out incredibly flavourful. You’ll be wanting to make them over and over again.

 

Ingredients :

1 can Eden Organic Pinto Beans, drained

2 sweet peppers, sliced

1 zucchini, sliced

½ sweet onion thinly sliced

Feta Cheese

1 Garlic clove, minced

1 tsp Cumin

½ tsp Paprika

1 tsp Onion Flakes (optional) 

1 tbsp Olive Oil (for the beans)

2 tbsp Olive oil (for the veggies)

Salt and pepper, to taste

Directions: 

1. First, prepare your refried beans. Add olive oil to a pan on medium heat. Turn down the heat and quickly sauté your garlic, and seasonings, make sure not to burn them. Then, add the beans and mix well to incorporate. Mash to desired consistency. Let them cook for 3 to 5 minutes, stirring occasionally and taste for salt. 

2. For the roasted veggies, start by preheating your oven to 400F. Place your sliced vegetables on a baking tray. Add olive oil and salt and pepper to taste, toss to incorporate. Place in the oven and bake for 10 minutes, remove from the oven and stir the veggies, and bake for an additional 10 minutes. If you don’t want to use the oven, you can cook them in a pan. The veggies are delicious this way too. 

3. Sprinkle water on the tortillas then place them on a hot skillet. Let the tortilla heat up for about 20 seconds and flip only once. Heat it up for another 20 seconds or until the tortilla looks and feels soft. Immediately transfer the tortillas into a tea towel or a piece of aluminum foil. Keep them covered until you are ready to assemble.

4. Lastly, begin assembling your tacos by smearing your desired amount of refried beans to one side of the tortilla. Scoop a generous amount of roasted veggies on top of the bean layer. Top off with feta cheese and AlbaLisa’s Jalapeño Cream Sauce.

 2. Crispy Queso Fresco Bean Tacos

For these tacos you will also use the same refried bean recipe which pairs wonderfully with the crispy queso fresco. These tacos will keep you full for hours without many calories to spend.  

Ingredients: 

Queso Fresco, 3 thick slices

2 Tomatoes, chopped

1 Jalapeño Pepper, seeded and finely sliced

1 Yellow or Sweet Onion, finely sliced

½ cup Cilantro, chopped

1 tbsp Olive Oil 

Salt and Pepper, to taste

Murphy's Hot Green Salsa or No.7 Jalapeño Sauce, optional

Elevated Refried Beans (recipe above) 

Directions: 

1. Place a pan or skillet over medium heat with olive oil and let heat up for a minute. Place the sliced Queso Fresco, cook until it has browned on one side, then flip it over. Keep cooking for about 2 minutes or until the other side becomes crispy too. 

2. Remove from the pan and add sweet onions, jalapeño peppers and sauté for about 3 to 5 minutes or until softened. Add chopped tomato and salt to taste. Stir well to incorporate. Cook for 3 more minutes until the salsa is fully cooked. 

3. Sprinkle water on the tortillas then place them on a hot skillet. Let the tortilla heat up for about 20 seconds and flip only once. Heat it up for another 20 seconds or until the tortilla looks and feels soft. Immediately transfer the tortillas into a tea towel or a piece of aluminum foil. Keep them covered until you are ready to assemble. 

4. Lastly, smear the desired amount of refried beans onto one side of the tortilla. Place a slice of crispy Queso Fresco on top and add the onion and tomato mix. Finish your tacos with a good amount of green salsa, garnish with cilantro if desired.
